Founded by Chef-turned-restauranteur Pang, alongside Chef Nicolas Badran, the duo unite their cultures, experiences and philosophies to create a dining experience rooted in freedom, flavour and authenticity.

Meet the Team

Chef Pang brings over 17 years of international experience to his first independent restaurant. Formerly Head Chef of COYA Abu Dhabi for six years, he played a key role in opening COYA in Doha and Riyadh, and led the reopening of COYA Mayfair in London. He later went on to become Executive Sous Chef at SUSHISAMBA. His transition from celebrated chef to restaurateur marks a defining moment in his culinary journey.

Chef Nicolas Badran, former Head Chef of SUSHISAMBA, whose Colombian heritage and global experience bring boldness, precision and contemporary flair to the kitchen. Together, Pang and Nicolas champion what they describe as “freedom in cooking” an approach that respects tradition while allowing creativity, memory and emotion to lead.

Manager

Born in Mexico City, a gourmand and hedonist, I studied gastronomy at the Claustro de Sor Juana in the culinary capital of Latin America and at the Culinary Institute of Mexico. I have worked in some of Mexico City's finest restaurants, such as Classico Au Pied de Cochon and the sophisticated French restaurant Eloise. In Dubai, I honed my management skills at the iconic Mexican restaurant Puerto 99, Tulum & Meshico, and continued my career at Sushisamba before joining Sa'Cha, always offering the warmth of Latin hospitality and the experience of a 5-star restaurant.
